   <subfield code="a">Cám gạo là sản phẩm phụ của quá trình xay xát gạo là nguồn nguyên liệu chính cho ngành chăn nuôi có hàm luợng chất dinh duỡng rất cao,nhưng cám gạo dễ hư hỏng do lipid oxy hoá. Nghiên cứu nhằm vô hoạt enzyme lypoxygenase( LOX), một enzyme oxy hoá chất béo có trong bản thân phụ phẩm cám bằng cách sử dung enzyme bromelian. Kết qẩ phân  tích mẩu cám sau khi xử lý,sấy đông khô cho thấy việc vô hoạt LOX bằng enzyme bromelian là có hiệu quả,làm giảm đáng kể chỉ số peroxyde của mẩu cám ,trong khi chế độ xử lý ảnh huởng không đáng kể đén thành phần protein và chất khoáng tổng số.</subfield>
