   <subfield code="a">Nghiên cứu được thực hiện nhằm xác định phư ng pháp trích ly tối ưu để thu nhận dịch chiết cao hàm  lượng polyphenol tổng số và hoạt tính kháng oxy hóa cao từ củ Hà Thủ Ô ỏ (Polygonum multiflorum Thunb.) (HTOD). Đồng thời xác định tính chất kháng khuẩn, sự tương tác với protein, khả năng ứng  dụng của dịch chiết trong bảo quản rau quả, chế biến thịt cá cũng như kiểm tra độc tính của dịch chiết polyphenol. Bên cạnh đó, việc tạo ra bột sấy phun và thiết lập mô hình suy giảm chất lượng cho dịch chiết và chế phẩm sấy phun cũng được nghiên cứu. . Nội dung đầu tiên gồm các thí nghiệm theo dõi sự ổn định hàm lượng polyphenol tổng số và hoạt tính kháng oxy hóa của củ Hà Thủ Ô ỏ ở 3 dạng bảo quản khác nhau (củ  tươi xắt lát lạnh đông, Hà Thủ Ô xắt lát sấy khô và dạng bột ở nhiệt độ môi trường). Trong nội dung thứ hai, sử dụng các phư ng pháp trích ly khác nhau như ngâm trích, trích ly có hỗ trợ vi sóng và siêu âm nhằm tìm ra phương pháp trích ly tối ưu để có được hàm lượng polyphenol tổng số và hoạt tính kháng oxy hóa cao nhất.</subfield>
