   <subfield code="a">An toàn vệ sinh thực phẩm giữ vị trí quan trọng trong bảo vệ sức khỏe con người, giảm tỉ lệ mắc bệnh, duy trì và phát triển nòi giống, tăng cường sức lao động, thúc đẩy tăng trưởng kinh tế và văn hóa xã hội. Hiện nay các loại sản phẩm thực phẩm được sản xuất, chế biến ngày càng phong phú, đa dạng và nhiều chủng loại. Trong quá trình tiếp nhận nguyên liệu, sản xuất, chế biến, bảo quản, vận chuyển, kinh doanh thực phẩm, nếu không tuân thủ, thực hành các quy định về an toàn, vệ sinh thì thực phẩm có thể bị ô nhiễm và không đảm bảo an toàn vệ sinh thực phẩm cũng như sẽ gây bệnh cho người tiêu dùng. Thực phẩm có thể là nguyên nhân gây ra các bệnh do nhiễm trùng, ngộ độc cấp tính hoặc mãn tính do sự tích lũy lâu dài của các chất độc hại ở một số cơ quan trong cơ thể và gây ra nhiều bệnh nguy hiểm, đặc biệt là các loại bệnh ung thư. Cho đến nay, đã có khá nhiều tiến bộ về khoa học kỹ thuật trong công tác bảo đảm an toàn vệ sinh thực phẩm, cũng như biện pháp về quản lý như ban hành luật, điều lệ và thanh tra, giám sát vệ sinh an toàn thực phẩm, nhưng các bệnh phát sinh từ thực phẩm ở nước ta cũng đang rất được quan tâm, lo ngại do tiêu dùng thực phẩm bị ô nhiễm, thực phẩm kém chất lượng, thực phẩm bẩn,... Do đó, an toàn vệ sinh thực phẩm là một trong những vấn đề cấp thiết của xã hội trong những năm gần đây, công tác đảm bảo chất lượng và an toàn thực phẩm phải được coi là nhiệm vụ trọng tâm, cấp bách và lâu dài. Đầu tư cho công tác đảm bảo an toàn thực phẩm là đầu tư cho phát triển, góp phần tạo ra sự phát triển bền vững của đất nước, mang lại hiệu quả kinh tế - xã hội.</subfield>
