   <subfield code="a">Động học phân hủy nhiệt của fructooligosaccharides (FOS) trong cám gạo tách béo được nghiên cứu ở các mức nhiệt độ 90, 100 và 110°C trong môi trường đệm pH 5,0;6,0 và 7,0 tương ứng với các mức thời gian xử lý nhiệt khác nhau (0, 5,10, 20, 30, 40, 50 và 60 phút). Hàm lượng FOS còn lại (bao gồm 1-kestose (GF2), nystose (GF3) và 1-fructosyl-nystose (GF4)) được xác định bằng hệ thống sắc ký lỏng ghép 2 lần khối phổ (LC-MS/MS). Kết quả nghiên cứu cho thấy, sự phân hủy nhiệt của FOS tuân theo mô hình động học bậc một (first order kinetic model). Hằng số tốc độ phân hủy nhiệt (k) của GF2, GF3 và GF4 ứng với các mức nhiệt độ khác nhau được tính toán sử dụng phương trình động học bậc một và phần mềm SAS 9.1. Phương trình Arrhenius được áp dụng đểmô tả sự phụ thuộc nhiệt độ của hằng số tốc độ phân hủy (k). Năng lượng hoạt hóa (Ea) được mô tả tương ứng với từng trường hợp GF2,GF3 và GF4 ở các giá trị pH 5,0; pH 6,0 và pH 7,0. Kết quả nghiên cứu cho thấy FOS là hợp chất rất bền nhiệt.</subfield>
