   <subfield code="a">Các sản phẩm chế biến từ tỏi (Allium sativum L.) có thể mở ra hướng sử dụng tỏi nhiều hơn để đáp ứng nhu cầu sức khỏe và phòng chống bệnh tật cho người  sử dụng. Tỏi  đen  hoặc  tỏi  lên men thể  hiện  tác  dụng  chống  oxy  hóa mạnh mẽ và hương vị dịu hơn  so với  tỏi  tươi. Bên cạnh đó, hội  tụ của công nghệ nano với các công nghệ khác cũng sẽ tác động lớn đến sản xuất, chế biến và bảo quản tỏi. Vì vậy, nghiên cứu tác động của kỹ thuật chế biến, bảo quản, xây dựng các mô hình động học biến đổi các hoạt chất quan  trọng  trong các sản phẩm từ tỏi với công nghệ nano được ứng dụng nhằm duy trì và nâng cao chất lượng sản phẩm cho quá trình sử dụng ở mức độ cao và hiệu quả hơn.</subfield>
