Nội dung thực hiện bao gồm (i) Nghiên cứu một số công đoạn tiền xử lý nguyên liệu tôm bạc đất có ảnh hưởng đến chất lượng sản phẩm tôm lên men chua; (ii) Xác đinh điều kiện lên men lactic thích hợp cho nguyên liệu tôm bạc đất; (iii) Khảo sát điều kiện bảo quản thích hợp giúp duy trì chất lượng sản phẩm tôm chua.</subfield>
