   <subfield code="a">Ergothioneine là hợp chất không màu không mùi, với trọng lượng phân tử 229,30 g/mol và giới hạn hòa tan trong nước cao 0,9 M ở 25°C. Ergothioneine có khả năng oxy hóa khử cao, có thể quét các gốc hydroxyl, các loại gốc chứa oxy và nitơ phản ứng, ức chế sản xuất chất oxy hóa bởi các ion kim loại và điều chỉnh các metalloenzyme. (i) khảo sát ảnh hưởng của ba acid amin cảm ứng là histidine, cysteine, methionin với hàm lượng dao động từ 0 đến 120 mg/20 g mẫu đến khả năng sinh tổng hợp ergothioneine, (ii) khảo sát ảnh hưởng của tỷ lệ nấm mốc A.oryzae bổ sung 0,3%-0,5%), hàm lượng ẩm (50%-60%) và giá trị pH (5,5 -6,5) của môi trường nuôi cấy đến khả năng sinh tổng hợp ergothioneine, (iii) khảo sát ảnh hưởng của nhiệt độ (80-100°C) và thời gian (5-20 phút) sử dụng trong trích ly ergothioneine của mẫu đã nuôi cấy và (iv) xác định khả năng hạn chế quá trình hóa nâu của táo khi bổ sung dịch chiết thô chứa EGT (0-2 mL/10 mL nước cất) để ngâm táo. Kết quả khi bổ sung 03 acid amin histidine: cysteine: methionine với tỷ lệ tương ứng là 120 mg: 54,38 mg: 83,04 mg. Hàm lượng EGT đạt 546,46 mg/100 g được thu nhận với tỷ lệ nấm mốc, hàm lượng ẩm và giá trị pH của môi trường nuôi cấy là 0,5%: 50,0%: 5,58. Nhiệt độ và thời gian trích ly dịch trích nấm mốc ở 90±1°C trong 10 phút giúp đạt hàm lượng EGT 69,09 mg/100 mL khi sử dụng dung môi là nước nóng. Sử dụng lượng dịch chiết thô chứa EGT với hàm lượng 1,5 mL và ngâm miếng táo cắt lát trong thời gian 10 phút cho giá trị L* là 61,62 và hàm lượng polyphenol còn lại nhiều nhất đạt 9,75 mg GAE/g trọng lượng khô. Nghiên cứu khám phá tác động đến khả năng tổng hợp EGT và vai trò có thể có của ergothioneine đối với thực phẩm.</subfield>
