   <subfield code="a">Kết quả thử độc tính của cao chiết lá trà xanh và lá ổi trên chuột cho thấy cao chiết lá trà xanh và lá ổi không gây ảnh hưởng đến sức khỏe chuột. Đối với thí nghiệm bảo quản lạnh, phi lê cá lóc (100 – 150 g/miếng) được ngâm trong dịch chiết lá trà xanh ở nồng độ 7,63 µg/mL và 625 µg/mL, dịch chiết lá ổi là 5,04 µg/mL (IC50) và 313 µg/mL (MIC) trong thời gian 30 phút. Mẫu đối chứng ngâm trong nước lạnh không chứa dịch chiết trong 30 phút. Sau đó, phi lê cá được đóng gói và bảo quản lạnh trong nước đá với tỉ lệ cá: nước đá là 1:1 (w/w). Chất lượng phi lê cá lóc trong quá trình bảo quản lạnh được đánh giá sau 1, 4, 8 và 12 ngày bảo quản thông qua các chỉ tiêu vi sinh (tổng số vi khuẩn hiếu khí), hóa lý (độ đàn hồi, khả năng giữ nước, tổng lượng nitơ bazơ bay hơi, hàm lượng peptide, chỉ số peroxide, chỉ số TBARs, sự thay đổi nhiệt độ, pH) và giá trị cảm quan. Kết quả cho thấy phi lê cá lóc được xử lý với dịch chiết lá trà xanh và lá ổi hạn chế được quá trình oxy hoá lipid, ức chế sự phát triển của vi sinh vật trong quá trình bảo quản lạnh và làm tăng giá trị cảm quan cao hơn so với mẫu đối chứng. Thêm vào đó, xử lý mẫu cá với dịch chiết lá trà xanh và lá ổi không ảnh hưởng đến độ đàn hồi, độ ẩm, khả năng giữ nước, hàm lượng đạm bay hơi, hàm lượng peptide và pH so với mẫu đối chứng. Dựa trên giá trị tổng vi khuẩn hiếu khí và giá trị cảm quan, phi lê cá lóc có xử lý với dịch chiết lá trà xanh và lá ổi có thể bảo quản lạnh đến 8 ngày trong khi mẫu cá không xử lý với dịch chiết có thể bảo quản lạnh trong thời gian ngắn hơn 8 ngày.</subfield>
