   <subfield code="a">Nghiên cứu được triển khai nhằm mục đích chiết rút collagen từ da và vảy cá lóc. Vì thế, đề tài đã được tiến hành với 3 nội dung chính bao gồm: (i) Khảo sát ảnh hưởng của nồng độ (M) và thời gian (giờ) ngâm NaOH đến khả năng khử protein phi collagen từ da cá lóc; (ii) Khảo sát ảnh hưởng của nồng độ (M) và thời gian (giờ) ngâm EDTA-2Na đến khả năng khử khoáng từ vảy cá lóc; (iii) Khảo sát ảnh hưởng của nồng độ (M) và thời gian (ngày) ngâm H3COOH đến khả năng chiết rút collagen từ da và vảy cá lóc. Kết quả cho thấy, (i) ngâm da và vảy cá lóc bằng dung dịch NaOH 0,09 M trong thời gian 3 giờ ở nhiệt độ 4°C với tỷ lệ nguyên liệu/dung dịch (w/v) là 1/8 đạt hiệu quả khử protein phi collagen là 24,31%, (ii) ngâm da và vảy cá lóc bằng dung dịch EDTA-2Na 0,8M trong thời gian 24 giờ ở nhiệt độ 4°C với nguyên liệu/dung dịch (w/v) là 1/8 đạt hiệu quả khử khoáng còn lại 1,98%, (iii) tách chiết collagen được thực hiện với H3COOH 0,6M với tỷ lệ nguyên liệu/dung dịch (w/v) là 1/5 trong 3 ngày ở nhiệt độ 4°C; kết tủa collagen bằng dung dịch muối NaCl 2,6 M trong Tris (hydroxymethyl) aminomethane 0,05 M ở pH = 7. Kết tủa collagen được ly tâm và thẩm tách qua hai môi trường là CH3COOH 0,1M để loại muối và môi trường nước cất để loại CH3COOH. Sau đó tiến hành đem mẫu đi sấy đông khô để tạo ra sản phẩm collagen có hiệu suất thu hồi là 2,086%, độ nhớt cao và màu sắc đẹp, đảm bảo an toàn về mặt vi sinh và hoàn toàn đáp ứng các tính chất cơ lý của collagen type I. Thành phần acid amin của collagen từ da và vảy cá lóc tương thích với collagen type I từ các loài da khác. Kết quả nghiên cứu cho thấy có thể tận dụng da và vảy cá lóc là một nguồn nguyên liệu để sản xuất collagen.</subfield>
