   <subfield code="a">Nghiên cứu các điều kiện chế biến trà túi lọc từ vỏ bưởi Năm Roi (Citrus grandis L.) hướng đến tác dụng hỗ trợ sức khỏe đã được thực hiện nhằm nâng cao giá trị sử dụng của nguồn phụ phẩm quan trọng này. Các nội dung nghiên cứu chủ yếu bao gồm: (i) Khảo sát ảnh hưởng của điều kiện tiền xử lý nhằm giảm vị đắng và duy trì chất lượng, bao gồm nhiệt độ và thời gian chần, chế độ xả đắng bằng ngâm muối NaCl; (ii) Xác định điều kiện chế biến trà phù hợp, bao gồm khảo sát điều kiện giảm ẩm bằng sấy sơ bộ, nhiệt độ sao rang và độ ẩm dừng thích hợp cho sản phẩm; (iii) Nghiên cứu công thức phối trộn thích hợp cho sản phẩm trà vỏ bưởi túi lọc có giá trị cảm quan cao và (iv) Đánh giá tính an toàn và tác dụng hỗ trợ sức khỏe của cao chiết từ trà vỏ bưởi. Kết quả nghiên cứu cho thấy vỏ bưởi Năm Roi được chần trong nước sôi (100oC) với thời gian 60 giây. Sau quá trình chần, ngâm trong dung dịch muối NaCl 10% (tỷ lệ 1:5 w/v) sau đó xả lại với nước (tỷ lệ 1:4, w/v). Điều kiện sấy sơ bộ bằng không khí nóng ở nhiệt độ 60±2oC trước khi sao rang ở nhiệt độ 140±2oC đến độ ẩm cuối của sản phẩm 8%. Việc phối trộn với các thành phần cỏ ngọt, đậu biếc và bụp giấm thu được sản phẩm có giá trị cảm quan cao và chứa các hợp chất có hoạt tính sinh học quan trọng. Các nghiên cứu in-vitro và in-vivo đối với sản phẩm trà vỏ bưởi Năm Roi cho thấy đây là sản phẩm an toàn, thông qua xác định độc tính cấp trên chuột ở 2 nồng độ dịch cao chiết từ trà vỏ bưởi.</subfield>
