   <subfield code="a">Nghiên cứu được thực hiện với mục tiêu xác định điều kiện tiền xử lý và trích ly nhằm thu nhận dịch trích có chứa hàm lượng các hợp chất có hoạt tính sinh học cao từ bột vỏ bưởi Năm Roi (Citrus grandis L.). Nội dung nghiên cứu bao gồm: (i) Xác định điều kiện tiền xử lý (chần và ngâm muối) thích hợp giúp ổn định màu sắc, hàm lượng polyphenol và giảm bớt vị đắng trong bột vỏ bưởi, (ii) Tìm ra điều kiện sấy chân không giúp duy trì chất lượng bột vỏ bưởi đồng thời theo dõi sự thay đổi hàm lượng và hoạt tính kháng oxy hóa của polyphenol ở điều kiện nhiệt độ phòng, (iii) Nghiên cứu sử dụng một số phương pháp trích ly khác nhau (như ngâm trích, trích ly có hỗ trợ khuấy từ và vi sóng) nhằm tìm ra quy trình thích hợp để thu dịch trích có hàm lượng và hoạt tính polyphenol cao nhất. Kết quả nghiên cứu cho thấy, vỏ bưởi được chần ở 100°C trong 60 giây, sau đó ngâm trong dung dịch muối NaCl 6% và NaHCO₃ 2% giúp bột vỏ bưởi có màu sắc đẹp mắt, hạn chế vị đắng và ổn định được hàm lượng polyphenol. Vỏ bưởi được sấy chân không ở 50°C giúp rút ngắn thời gian sấy. Bên cạnh đó, hàm lượng polyphenol tổng, hàm lượng flavonoid tổng, hoạt tính kháng oxy hóa thu nhận được đạt kết quả cao nhất, đồng thời bột vỏ bưởi vẫn còn vị the, đắng nhẹ đặc trưng của vỏ bưởi. Đối với mẫu bột khô, các chỉ số chất lượng vẫn duy trì so với ban đầu sau 60 ngày bảo quản ở nhiệt độ phòng.</subfield>
