   <subfield code="a">Trái giác (Cayratia trifolia) chứa nhiều hợp chất có hoạt tính sinh học cao, có khả năng kháng oxy hóa, giảm sự  tăng trưởng của khối u và được sử dụng làm dược liệu, là nguồn nguyên liệu tốt  lên men  rượu vang, một sản phẩm rất phổ biến hiện nay. Ngày nay trái giác đã được nghiên cứu nhiều trên thế giới về thành phần cũng như hoạt tính của nó, tuy nhiên ở Việt Nam các nghiên cứu về  trái giác vẫn còn hạn chế. Nghiên cứu này được thực hiện với mục tiêu tìm ra nấm men chịu nhiệt có khả năng lên men rượu vang trái giác. Kết quả phân tích 53 mẫu trái giác được thu ở 13 tỉnh/thành phố thuộc Đồng bằng sông Cửu Long (ĐBSCL) cho thấy trái giác chứa hàm lượng polyphenol từ 0,47 đến 1,54 mg đương  lượng acid gallic trong 1 mL (GAE/mL) và khả năng  kháng oxy hóa từ 16,6 đến 82,86%,  hàm  lượng  đường tổng trong trái giác từ  0,41 đến 2,17 g/100  mL, hàm lượng đường khử  từ  0,22 đến 0,96 mg/100 mL. Từ 53 mẫu trái giác thu ở 13 tỉnh đã phân lập được 151 chủng nấm men được phân loại sơ bộ thuộc bốn  giống  Saccharomyces, Hanseniaspora, Pichia, và Candida. Các chủng nấm men đều  phát triển  tốt mức nhiệt độ 30ºC đến 35°C, trong đó có 64/151 chủng có khả năng phát triển ở nhiệt độ 37ºC trong môi trường có nồng độ ethanol từ 9 đến 12% v/v. Dựa vào kết quả đánh giá khả năng  lên men rượu vang trái giác ở 37ºC đã  tuyển chọn được 30/64 chủng nấm men có khả năng chịu nhiệt từ 37ºC đến 45ºC, có khả năng phát triển ở nồng độ ethanol trong môi trường từ 9 - 12% và lên men sinh ra ethanol đạt từ 6% (v/v). Kết  quả  định  danh  bằng  phương pháp giải trình tự DNA của 30 chủng nấm men chịu nhiệt được tuyển chọn, dựa trên cơ sở dữ liệu GenBank (NCBI) cùng với kết quả phân tích về hình thái, sinh lý và sinh hóa đã xác định 30 chủng nấm men thuộc bốn  giống  Saccharomyces, Candida, Pichia và Clavispora,  trong đó Saccharomyces cerevisiae được  tìm thấy khá  phổ biến.  Kết quả  nghiên cứu  cho thấy  chủng nấm men Saccharomyces  cerevisiae HG1.3 có khả năng chịu nhiệt đến 43ºC, lên men rượu trái giác ở nhiệt độ 35ºC với 20 ºBrix, pH ban đầu 4,5 và mật số chủng nấm men 105 tế  bào/mL, sau 6 ngày lên men đạt hàm lượng ethanol đạt 11,68% (v/v). Sản phẩm rượu vang trái giác có chứa hàm lượng polyphenol 0,60 mg GAE/mL, có khả năng kháng oxy hóa là 57,3% và có tính đặc trưng về màu sắc, hương vị.</subfield>
