   <subfield code="a">Đề tài được thực hiện với mục đích tinh sạch oligopeptide được thủy phân từ đậu nành có hoạt tính kháng oxy hóa cao. Qua các thí nghiệm khảo sát sự ảnh hưởng của sự tương tác của nhiệt độ và pH thủy phân; hàm lượng cơ chất cho thấy: nồng độ bromelain thô từ vỏ khóm với nồng độ 10 U.mg⁻¹ phản ứng với 2,0 g bột đậu nành đã loại lipid ở pH 6, nhiệt độ thủy phân 30°C là điều kiện thích hợp nhất để tạo dịch đậu nành thủy phân có khả năng kháng oxy hóa cao. Dịch đậu nành thủy phân qua sắc ký lọc gel Sephadex G-25 thu được 3 phân đoạn F1, F2, F3 với khả năng kháng oxy hóa lần lượt là 25,26%, 6,44% và 3,01%. Ba phân đoạn thu được ở sắc ký lọc gel tiếp tục được tinh sạch bằng sắc ký tương tác kỵ nước trên gel Phenyl Sepharose CL-4B. Mỗi phân đoạn F1, F2, F3 của sắc ký lọc gel qua quá trình sắc ký tương tác kỵ nước trên gel Phenyl sepharose CL-4B được phân tách thành 2 phân đoạn (F1 và F2). Các phân đoạn có tính kỵ nước cao (F2) kháng oxy hóa cao hơn các phân đoạn có tính kỵ nước thấp (F1). Khả năng kháng oxy hóa của 3 phân đoạn F2-HIC (F1-G25), F2- HIC (F2-G25) và F2-HIC (F3-G25) lần lượt là 32%, 15,5% và 13,8%. Kết quả điện di cho thấy có sự xuất hiện của băng peptide cho khả năng kháng oxy hóa cao với khối lượng phân tử 6,32 kDa.</subfield>
