A comparative study on nutrient profile, physico-functional, phytochemical properties and injera making quality of millet varieties grown in Ethiopia : Master’s dissertation submitted in partial fulfilment of the requirements for the Degree of Master in Food Technology
The aim of this study was to evaluate the rheological, functional, proximate compositions, injera making quality, polyphenols content, antioxidant activity and color characteristics of improved millet varieties grown in Ethiopia.
