Dynamics of microbial safety of pangasius fillet during processing and new approaches in evaluating the effective operation of food quality management system : Master’s dissertation submitted in partial fulfilment of the requirements for the Degree of Master in Food Technology
This study was conducted to assess the dynamics of microbial quality and safety of frozen Pangasius fillet throughout processing and to understand the transmission routes of bacteria during the handling of Pangasius products.
